Cynthia Beavers; is a leading raw food chef, two time restauranteur, culinary educator, and entrepreneur specializing in the plant-based lifestyle. Both of her restaurants were the first of their kind in Texas and Oklahoma. She gained immediate notoriety for innovative healthful cuisine. She has appeared on television and written about in numerous magazine and newspaper articles. She has also authored three recipe books.
Cynthia grew up in Las Vegas, where she was introduced to different types of cuisine at a very young age. Her parents were vegetarian and committed to health. She soon understood that food you eat will either contribute to vibrant health or illness and disease. She believes when food is subjected to intense heat it affects your body in a negative way.
Cynthia has redefined cooking because she doesn't cook anything!.—you wont find a stove, an oven or a hood vent in her kitchen. She prepares dishes by juicing, dehydrating, blending, grinding, mixing and slicing, using several pieces of equipment that are commonplace in virtually any professional kitchen.
In 2005, Cynthia opened Pure Cafe in Dallas, Texas and Pure Cafe Tulsa in 2009. She also founded the first raw vegan meal delivery service shipping nationwide 15 years ago.
Her most recent venture, PURE FOOD & JUICE opened downtown in 2015. Raw food philosophy The basic premise behind preparing raw food is not to cook food above 118ºF. Cooking food denatures both the protein and the fats. So instead of your body using the food it simply stores it.” When food is cooked above 118ºF, 85% of the food's natural enzymes are destroyed. This forces your body to generate the enzymes necessary to digest the food. This results in partially digested foods that can clog the body's intestinal tract and arteries.
Cynthia's goal is to open people's minds to look at and experience another type of food prepared in a revolutionary way. When food is not cooked, different textures are revealed and an abundance of flavors are released that are lost when cooked.
